Fresh & Fruity Waffles

fruity-wafflesI’ll admit it…we LOVE frozen waffles here. I know I could make my own and freeze them (and I do do that with pancakes and french toast), but the size of Eggo waffles (ahem, or their generic counterpart) is perfect, and I figure I can get a big box for $1.89 and get two meals out of it, so it’s worth the convenience.

That said, we do consider syrup on waffles to be a special treat. Don’t get me wrong – I LOVE syrup on waffles. But I fight mommy guilt when I give the girls sugary breakfasts, so I look for alternatives whenever I can.

Our solution to this is simple and yummy: yogurt & fruit waffles.

I use a fruit- or vanilla-flavored yogurt as a spread rather than butter and syrup and then top it with mounds of fresh fruit. In the winter, I use frozen blueberries and raspberries as well as bananas. The combinations are virtually endless, and it’s a breakfast I can feel good about serving!

  2. Yummm! That looks really tasty. We are in the process of freezing blueberries for the winter for this very idea and to make cobblers too.
