Quesadillas
Brittany mentioned she’s always on the lookout for easy dinners (as am I!), so as I was making these quesadillas last night, I started snapping pictures. My dad made these when he came to meet Sweet Doodle last year after her birth, and they’ve been a favorite ever since, and even more so since my grandmother bought me this electric griddle, which I LOVE!
First, prepare chicken as you would for tacos. I boil some water, add a couple of chicken breasts and cook them until they’re done. I dump out the water, slice up the chicken and then add a little bit of water and the chicken pieces back into the pot with half a packet of taco seasoning (I only did 2 chicken breasts. Adjust the amount accordingly).
Next, warm up your griddle or pan and add a small amount of olive oil. Spread it out with your spatula and then add your tortillas (I use large flour tortillas). I give my tortilla a spin on the pan to distribute the oil – and because it makes me feel like a real chef – and then I flip it over. I let that side warm and then I flip it again and add cheese.
Next, I add the chicken. Or not – the girls prefer theirs without.
Fold it in half and let it cook on one side. (I have no idea why this picture is so…pink.)
And then flip it and cook the other until it starts to get crispy.
Voila! A yummy, easy lunch or dinner!
There are sauces you can make to add to quesadillas, and you can serve with salsa, sour cream, lettuce, guacamole and so on, but we prefer just to go with basic quesadillas with salsa on the side.

You’re welcome, Brittany!BR/BR/Justine, that is funny! I actually had one of those and gave it away about a year ago before we moved. It wasn’t that I didn’t like it. I just found that I had to cut down on the number of small appliances we have, and I was rarely using it because of the trouble it took to get it out and put it away. I actually think that when my dad brought the stuff for quesadillas, he was planning to make them in that, but then he showed me how to do it in the pan.
lately I think that is one of the things I use most in my kitchen!! I have some really weird shelves that are short in height so I slide this right in there… so far its a keeper!! But I will keep the pan technique in mind if I ever need to downsize!! LOL
