Sunshine Cupcakes for the Last Days of Summer

School might be back in session, but we technically still have a few more weeks of summer left. I made these adorable sunshine cupcakes for the girls a couple of weeks ago (and then the picture sat on my camera all this time – oops!), and I love the way they turned out.

I simply cut triangles from graham crackers (sawing very slowly and carefully with a paring knife so the corners wouldn’t break off), positioned them around the edge of the iced cupcake and then piped a yellow outline around them.
