Easy Colorful Baked Ziti

Baked ziti is one of my favorite easy meals because of its versatility. It can be made ahead of time or quickly thrown together at dinnertime, and despite the name, you can use a variety of pasta shapes.

In the picture above, I used the tri-color rotini to jazz it up a bit.

Ingredients:
1lb box of pasta – any smallish shape
24 oz. sauce
15 oz. ricotta cheese
1 egg
1/4 cup parmesan cheese
1 cup mozzarella cheese

Cook the pasta al dente.

In a bowl, beat the egg and then stir in ricotta and parmesan cheese and set aside.

Drain the noodles and stir in the sauce.

Layer half of the noodles on the bottom of a 9×13 pan. Spread the cheese mixture on top and then the rest of the noodles. Top with mozzarella.

Cover with foil and bake at 350 for 30 minutes.
