After I shared a href=”http://mythreedoodles.blogspot.com/2008/05/cinnamon-sugar-tortilla-chips.html”one of our favorite afternoon snacks/a a couple of weeks ago, a href=”http://soaerang.livejournal.com/”Kim/a emailed me this delicious fruit salsa recipe from a href=”http://www.bedandbreakfast.com”bedandbreakfast.com/a. I made it last weekend, and it is emyummy/em. I actually didn’t have apple jelly and used orange marmalade instead, but it still turned out great, and the girls gobbled it up (not that they take after their momma or anything).br /br /strongINGREDIENTS:/strongbr /2 medium tart apples (Granny Smith), chopped br /2 teaspoons lemon juice br /1 cup fresh strawberries, chopped br /2 medium Kiwi fruit, peeled and chopped br /1 small orange br /2 tablespoons brown sugar, firmly packed br /2 tablespoons apple jelly, melted br /8, 8-inch flour tortillas br /water br /1/4 cup granulated sugar br /2-4 teaspoons ground cinnamon br / br /br /strongPREPARATION:/strongbr /In a large bowl, toss the chopped apples with the lemon juice to keep from browning. Add the chopped strawberries, and kiwi. Grate about one tablespoon of orange peel (the zest) into the bowl. Then slice the orange in half and squeeze out about 3 tablespoons of the orange juice. br /br /Make sure to remove any seeds from the orange so they do not get into the salsa. Stir in the brown sugar and jelly; set aside.br /br /To prepare the cinnamon tortilla chips, brush both sides of the tortillas with a tiny bit of water (note: I used my spray olive oil), just enough to allow the sugar and cinnamon to stick.br /br /Blend together the sugar and cinnamon and sprinkle it lightly over the tortillas, turning to cover both sides. If you have an empty spice shaker, it works well to double the mixture and sprinkle it over the tortillas from the shaker. Any leftover sugar and cinnamon is perfect for preparing cinnamon toast, quick and easy.br /br /Cut each tortilla into 8 equal pie-shaped wedges as you work and place the pieces in a single layer on a baking sheet that has been lightly coated with a non-stick cooking spray or a thin brush of butter.br /br /Bake the cinnamon coated tortillas in a pre-heated 400 degree oven for 6 to 8 minutes or until lightly browned. Cool until crisp, then serve with the apple salsa on the side.br /br /br /a href=”http://www.mylivesignature.com” target=”_blank”img src=”http://signatures.mylivesignature.com/54486/128/0E4A8EA9D2A4A002FC32D3D163051882.png” style=”border: none; background: transparent;”//abr /br /––––-–––––-––––––––-–––––––-––––-––––––-–-––––––-–––-–-–––br /span style=”font-size:85%;”Check out /spana href=http://mythreedoodles.blogspot.com/2008/06/and-this-weeks-favorite-things.htmlspan style=”font-size:85%;”this week’s giveaway/span/aspan style=”font-size:85%;”: A $25 gift certificate to /spana href=http://scripts.affiliatefuture.com/AFClick.asp?affiliateID=129253amp;merchantID=2533amp;programmeID=6755amp;mediaID=0amp;tracking=amp;url=http://www.duckduckgooseboutique.com/span style=”font-size:85%;”Duck Duck Goose Boutique/span/aspan style=”font-size:85%;”!/spanstrong/strongem/em
